The Chef: Jonathon Sawyer

Chef Jonathon Sawyer, a Cleveland native, first learned to cook at the age of 13 from his brother. “My parents believed in a solid work ethic,” says Sawyer, “I was lucky that I learned that I wanted to be a chef at such a young age.”
Under the careful tutelage of many gifted chefs including Michael Symon, the chef and owner of Lola and Lolita restaurants in Cleveland, Chef Charlie Palmer at Kitchen 22 in New York City, and Chef Philippe Ruiz at The Biltmore, Sawyer has developed into a truly talented chef.
After attending the University of Dayton and graduating from the Pennsylvania Institute of Culinary Arts, Sawyer went on to work at The Biltmore Hotel in Miami. One year later, he worked alongside renowned Chef Charlie Palmer in New York at Kitchen 22, Aureole, Astra and Kitchen 82. Chef Sawyer recently became the Chef/Partner of Bar Cento, a modern Roman enoteca in Ohio City. He is also in the process of opening The Greenhouse Tavern, the first Green restaurant in Ohio. When outside the kitchen, Sawyer enjoys walking his two dogs, a pit bull named Potato and a pug named Vito in the Cleveland Metroparks, as well as spending time with his wife,son Catcher & newborn daughter Louisiana.

A bar in Italy is a warm and neighborly place where people enjoy coffee, world-class wine, and delicious food. It's often the center of social life. Romans may visit their local bar several times throughout the day and again at night for an aperitivo. This tradition inspired us. We wanted to open an old-world gathering place with fantastic food and drink. We hope you enjoy it.

Cento (pronounced "chento") is Italian for 100. We feature centi vini, 100 wines, that pair with our traditional rustic-Roman recipes, while emphasizing the informal and fun aspects of wine.
On Thursdays we feature "Flight Nights" where we open select and often rare bottles of premium wines and enjoy informal samplings.
The Rock & Roll Wine Project has become a huge hit. We play vintage vinyls on the Bar Cento turntable while sporting our favorite concert t-shirts, all set to the beat of themed wine and coctail samplings. Some recent R&R Wine Projects were the Dark Side of the Moon Night, the Frank Zappa Party and the Novelty Band Edition.
Centi vini, 100 wines, complement an adventuresome kitchen, directed by Chef-Partner Jonathon Sawyer, who came home from New York City to raise a family and open Bar Cento. Sawyer is the former head chef of Michael Symon's Lolita in Tremont and the former executive chef at Parea in Manhattan.
Chef Sawyer has created dishes with Roman recipes and utilized the freshest local and organic ingredients. The menu includes brick-oven modern and traditional pizzas, house-cured salume and antipastos, Belgian beer steamed mussels, and award-winning pommes frites.
Bar Cento has been voted Cleveland's Best Pizza.
Bar Cento complements the international flavor of McNulty's Bier Markt, a Belgian beer bar right next door on West 25th Street, in Cleveland's eclectic Ohio City. Food is served haute-rustic style in a lively dining room warmed by treasures we discovered in Northeast Ohio and around the world. The polished bar was crafted from wood reclaimed from an Amish barn built in the 1800s. Design touches include artwork from Southeast Asia and drapery from Peru. See if you can find the Laotian lamp made from cow dung, somewhere in the Bier Markt.
Open 365 days a year.
4:30pm until to 2:30am --- you can even stop in a few minutes early, we'd be happy to see you. We open for lunch at 12:00pm on Saturdays.
