To brew our interpretation of this classic style, we filled our brewhouse to the brim with Swaen Pilsner malt, which has a fuller and richer flavor than the German varieties. Similar to the classic Belgian bottle-conditioning technique, we sealed the tank as the beer was actively fermenting and allowed the pressure to build, thus allowing the beer to burst with effervescent carbonation, citrusy noes and a beautifully spiced hop finish. Now that is what we call a great good!
